Hiring Experienced Bread Baker for Artisan Bakery in Burbank

Position: Experienced Bread Baker
Location: Burbank, CA 91504
Compensation: Starting at $30.00 per hour / DOE
Employment Type: Full-Time, approximately 40 hours per week
Schedule: 5–6 days per week. Schedule to be determined. Friday, Saturday, and Sunday availability is required.
Shift Times: Early-morning and overnight shifts may be required depending on production needs.

Crust Artisan Bakery is looking for an experienced, reliable, and highly skilled Bread Baker who is capable of managing and completing a full artisan bread production shift independently.

This is not an entry-level bread-baking position. We are looking for someone who understands dough, fermentation, shaping, scoring, baking, and production organization and who can confidently take responsibility for bread production from start to finish.

Responsibilities

  • Independently handle full daily bread production from beginning to end
  • Mix multiple doughs according to production schedules and established formulas
  • Understand and manage dough temperature, hydration, gluten development, fermentation, and proofing
  • Monitor fermentation and make appropriate adjustments based on dough condition, temperature, timing, and production needs
  • Scale, divide, pre-shape, shape, score, and bake artisan breads consistently
  • Produce breads including:
  • Sourdough loaves
  • Baguettes
  • Ciabatta
  • Focaccia
  • Multigrain and seeded breads
  • Inclusion breads and seasonal varieties
  • Demonstrate strong baguette shaping and scoring skills
  • Prepare and manage levain, starters, poolish, and other preferments
  • Maintain proper starter feeding and rotation procedures
  • Follow daily and weekly production quantities accurately
  • Calculate and scale recipes based on required production volume
  • Prepare ingredients, inclusions, levain, and pre-weighed production bins for upcoming shifts
  • Load, operate, and monitor commercial bread ovens
  • Adjust baking times and procedures when necessary to maintain product quality
  • Evaluate dough throughout production and identify problems before they affect the finished product
  • Maintain consistent quality, appearance, weight, shape, fermentation, and bake across all products
  • Organize production efficiently to ensure all bread is completed on schedule
  • Work independently without requiring continuous supervision or instruction
  • Communicate production issues, shortages, equipment concerns, or quality problems to management
  • Maintain accurate labeling, dating, and organization of doughs, ingredients, starters, and production containers
  • Maintain clean and organized mixers, work tables, flour bins, proofing equipment, tools, boards, couches, and work areas
  • Follow all food-safety, sanitation, and bakery procedures
  • Help maintain an efficient, professional, and team-oriented production environment

Minimum Qualifications

  • Minimum 5 years of professional bread-baking experience strongly preferred
  • Professional artisan bread-baking experience required
  • Must have substantial hands-on experience with mixing, fermentation, shaping, scoring, and baking
  • Must be experienced with naturally leavened and sourdough bread production
  • Strong experience shaping baguettes and sourdough loaves is required
  • Experience producing ciabatta and focaccia is required
  • Must understand how fermentation changes based on dough temperature, room temperature, hydration, timing, and dough condition
  • Must be capable of evaluating dough by feel and appearance rather than relying only on a timer
  • Must be comfortable handling multiple doughs and production deadlines during the same shift
  • Must be capable of running a bread-production shift independently and efficiently
  • Must be dependable, punctual, organized, and able to manage time effectively
  • Must be comfortable working early-morning and/or overnight bakery shifts
  • Must be available Friday, Saturday, and Sunday
  • Must be 18 years of age or older
  • Effective communication skills and ability to work as part of a team
  • Basic mathematical skills, including recipe scaling and production calculations
  • Able to stand for extended periods of time
  • Able to reach, bend, stoop, push, pull, and repeatedly lift up to approximately 50 pounds
  • Must possess or obtain a valid California Food Handler Card as required

The Person We Are Looking For

We are looking for someone who is experienced, fast, organized, consistent, and accountable.

The ideal candidate should be able to walk into a scheduled production shift, review the quantities that need to be produced, organize the workflow, and successfully complete the entire bread production without needing constant guidance.

You should be comfortable making professional decisions during production when dough conditions change and be able to identify and correct issues involving fermentation, dough development, shaping, proofing, or baking.

Consistency and efficiency are extremely important. Our goal is to find a baker who can take ownership of bread production while maintaining the quality standards of an artisan bakery.
